Pear and ginger loaf

This is a recipe I found while browsing a magazine at the dentist! The original recipe used cold tea, but I substituted a mixed red berry tea, which gives it an interesting flavour.

  • Total time: About 1 1/2 hours

Serves: 6

Ingredients

  • 140gm semi-dried pears
    110ml mixed red berry tea, using 2 tea bags
    110gm softened butter
    110gm light brown sugar
    2 medium eggs
    140gm S.R. flour
    1/2 tsp baking powder
    40gm crystallised ginger, chopped.

Method

  1. 1. Make the fruit tea, remove the tea-bags and add the pears ,chopped. Set aside 20min. 2. Add baking powder to flour, and mix well. Cream the butter with the sugar till fluffy, then slowly add the beaten egg, alternating with some of the flour whisking in until all the egg and flour have been incorporated. 3. Fold in pear and tea mixture and chopped ginger.
  2. Line a 1lb loaf tin (approx 23cmx12x8cm) with baking parchment. Spoon in the mixture. I bake in a 2-oven Aga, and use the grid shelf on the floor of the roasting oven with the plain cold shelf over. This equates to about 170*C or gas 4, for about 40min., or until well risen and a skewer inserted comes clean. Lift out onto a wire cooling rack.
