    Quick salmon & chorizo casserole

    Serves: 2


    1 tbsp oil
    60g pack Cooks’ Ingredients Diced Chorizo
    1 red pepper, diced
    400g can chopped tomatoes
    50g pitted green olives, halved
    280g pack Waitrose 2 boneless Scottish Salmon Fillets, skinned and cut into chunks
    ½ x 25g pack fresh parsley, chopped


    1. Heat the oil in a frying pan and fry the chorizo and pepper for 2-3 minutes, stir in the tomatoes and olives. Half fill the can with water and add to the pan. Simmer for 5 minutes.

    2. Stir in the salmon and cook for a further 5 minutes. Serve sprinkled with parsley.
