Soda Bread Pizza

Ingredients

Pizza Base

450g plain, unbleached white flour

1 level tsp sugar

1 level tsp bicarbonate of soda

1 level tsp salt

350ml buttermilk, plus a little extra

Tomato Fondue
-
2 tsp olive oil
-
1 onion, sliced
-
1 clove garlic, crushed
-
900g tomatoes (fresh, or drained, tinned ones)

salt, freshly ground pepper and sugar

1 tbsp chopped thyme, parsley, mint, basil or marjoram

Toppings

150g Cheddar, grated

60g chorizo sausage, sliced

3 large mushrooms, sliced
Method

Make the tomato fondue. Heat the oil in a wide pan over a gentle heat. Sweat the onion and garlic until completely soft (10-15 minutes).

If using fresh tomatoes, core them, then cover with boiling water, leave for a minute, and drain. Peel and slice, and add to the onions. If using tinned, just roughly chop first. Season with salt, pepper and sugar. Add the herbs. Cook for 10-20 minutes more.

Meanwhile, make the base. Preheat the oven to 230C/gas mark 8. Sift the dry ingredients into a bowl, make a well and pour in the 350ml buttermilk. Mix, adding more buttermilk if necessary. Turn onto a floured board, knead briefly then roll out to fit a swiss roll tin (25.5 x 38cm) or divide into 6 pieces.

Spread 8 tbsp tomato fondue on the dough. Scatter over the toppings. Bake for 25 minutes. For small pizzas, roll out each piece of dough to a 15cm round. Add the toppings and bake for 8-10 minutes.
