    Sweet Potato and Ginger Mash

    Serves: 3 - 4

    Ingredients

    • 1kg sweet potato
    • 2 tbsp olive oil
    • 1 tbsp chopped fresh ginger
    • 1 deseeded chopped red chilli
    • 1 tbsp chopped coriander

    Method

    1. Ginger adds a zesty kick to this wonderfully healthy mash. Boil 1kg peeled, chopped sweet potato in water until tender. Drain well then push through a vegetable mill or potato ricer.
    2. Meanwhile, heat 2 tbsp olive oil in a small pan. Add 1 tbsp chopped fresh ginger and 1 deseeded, chopped red chilli. Fry for a couple of minutes until soft.
    3. Stir the ginger, chilli and oil into the mash along with 1 tbsp chopped coriander. Season and serve with grilled fish or chicken, veggie sausages or roasted mushrooms.
