Unwin Twist Fajitas

Ready for some Mexican spice? This recipe is an Unwin twist on the Old El Paso fajita kit.

1 Old El Paso Smoky BBQ Fajita Kit
1 Extra pack of Old El Paso flour tortillas
2 Large Chicken Breasts
1 Small Red Bell Pepper
1 Small Yellow Pepper
1 Small Green Pepper
1 Medium White Onion
1 Pinch of dried Garlic
1 Pinch of dried sweetened coconut
1 Pinch of black pepper
1 Small Pinch of salt
1 Pot of Sour Cream
1 Pot of Guacamole
2 tsp of Olive Oil


If you want your fajitas to taste even better then, slice the chicken breasts into long thin strips into a tupperware box and pour the Smoky BBQ powder onto the chicken. Leave to marinade for couple of hours before cooking your meal.
If you don't want to do step 1 then follow these next instructions. Slice the peppers into long thin strips and put to one side. Next slice the onions into either onion rings or cut the onion in half and slice each half lengthways. To stop your eyes watering while chopping onions, chew something while doing it. It takes the smell away. Put to one side. Then cut the chicken breast into long thin strips.
Heat up the pan and put in the oil. Spread around the pan so the base is fully covered. Next sprinkle the garlic all over the oiled pan. When it starts to brown put in the chicken and cook so it's white through and through.
Next put in the vegetables and the Old El Paso Smoky BBQ powder, the coconut powder, the salt and the black pepper. Fold the vegetables and chicken in the pan carefully.
When everything has been coated, keep the pan on the hob and cook for a further 5 minutes while constantly shaking the pan and stirring with your spatula to make sure the food doesn't stick to the pan. While it's cooking, take 10 tortillas and put them on a plate in the microwave for 10 seconds. Turn the tortillas over and shuffle after each 10 seconds. Repeat once more.
Put the meat and veg into a dish so you can serve it. Put sour cream, guacamole or salsa on your tortillas and put the meat and veg in the fajita. Wrap and enjoy!
