Serves: 4 as a side
1 sheet nori seaweed
1 large, ripe avocado, finely chopped
½ cucumber, peeled, deseeded and finely chopped
1 tbsp toasted sesame oil
1½ tbsp sesame seeds, toasted
1 tsp Japanese rice wine vinegar
1 tbsp light soy sauce
½ tsp finely grated ginger
1. Snip the nori sheet into fine shreds using scissors. Combine with all the other ingredients in a bowl and season with a little salt. Serve with vegetable tempura or as a side for sushi or baked fish.
