Baked potato & cheese farls

Farls are a classic Irish treat served with fried eggs and tomatoes for the perfect fry-up. Instead of cheese, try adding chilli flakes and garlic granules or mixed seeds
Serves: 4
4 Waitrose Duchy Organic Baking Potatoes
15g butter, melted
50g mature Cheddar cheese, grated
15g Parmigiano Reggiano, finely grated
½ x 25g pack chives, snipped
75g plain flour
3-4 tbsp oil for frying
1. Preheat the oven to 200°C, gas mark 6. Prick the potatoes with a fork and bake for 1-1¼ hours or until tender inside. Allow to cool.
2. Scoop out the flesh of the potatoes into a large bowl and mash well with a fork until smooth. Mix in the butter, cheeses, and all but 1 tbsp chives, season well. Stir in the flour and mix until well incorporated. Divide into 4.
3. On a lightly floured surface, roll out each quarter into a 16cm round and cut into 4 triangles. Repeat with the remaining dough.
4. Heat a little oil in a large frying pan and fry the farls in batches, for 1 minute on each side or until golden. Serve sprinkled with the remaining chives sprinkled over.
