Banana, berry & peanut butter bars

Sunflower oil, for greasing
110g pack frozen Waitrose Duchy Organic Blueberry & Raspberry Oat Smoothie Mix
3 ripe bananas
100g Waitrose Duchy Organic Crunchy Peanut Butter
2 tbsp pumpkin seeds (or sunflower seeds or chopped nuts)
175g Essential Porridge Oats
½ tsp baking powder
1 British Blacktail Free Range Medium Egg
2 tbsp clear honey
30g Belgian white chocolate, chopped
1. Preheat the oven to 180°C, gas mark 4. Line a small rectangular baking tin (about 17x23x5cm) with baking parchment. Remove the coconut milk from the smoothie mix pack and set it aside in a small heatproof bowl.
2. In a bowl, mash the bananas with a fork until smooth. Add the peanut butter, seeds, oats, baking powder, egg and honey and stir until mixed. Scrape the batter into the tin and flatten. Scatter with the frozen berries.
3. Bake for 30 minutes until firm in the middle. Cool in the tin, then remove and peel away the lining paper.
4. Melt the reserved coconut milk and white chocolate together in short blasts in the microwave, or over a pan of simmering water. Stir often until smooth. Drizzle over the bake, leave to set in the fridge, then cut into bars. Will keep in an airtight tin for 2-3 days.
