Brown butter radishes with bacon

Serves: 4 as a starter or side
30g unsalted butter
4 rashers smoked streaky bacon, finely sliced
½ tsp sweet smoked paprika
300g radishes, trimmed and halved (quartered, if large)
1 tbsp sherry vinegar
1. Melt the butter in a large frying pan over a medium heat. Add the bacon and fry until golden and crisp and the butter has browned (10-12 minutes). Sprinkle in the paprika. Add the radishes to the pan, cut side down, and turn the heat up a little. Fry for about 10 minutes, until the radishes are golden. Season, then add the vinegar. Toss until well mixed and serve straight away. Serve as a starter or light lunch accompanied with a green salad and crusty bread if liked, to mop up the delicious juices.
