Caprese vegetable bake

Serves: 2
1 ciabatta roll
1 clove garlic, chopped
½ x 25g pack basil, shredded
25g pitted green
olives, sliced
2 essential Waitrose Slicing Tomatoes, thickly sliced
125g pack mozzarella, thinly sliced
1 courgette, sliced diagonally
2 tsp extra virgin olive oil
1 Preheat the oven to 200ºC, gas mark 6. Tear the bread into a food processor and add the garlic. Season and blitz to make breadcrumbs, then stir in the basil and olives. Scatter half over the base of a large serving dish.
2. Alternately overlap the tomatoes, mozzarella and courgette over the breadcrumbs on the base, season and scatter over the remaining crumbs. Drizzle over the oil and bake for 25 minutes until golden and tender.
