Try this twist on a traditional mojito, which replaces the soda water with Champagne
50ml white rum
12.5ml sugar syrup
25ml lime juice
8 mint leaves
Icing sugar, to garnish
1. Place the mint in the glass and press gently with a muddler.
2. Add the rum, sugar syrup and lime juice. Fill the glass halfway up with crushed ice, pour over the Champagne and stir well.
3. Top up with more ice, garnish with a dusting of icing sugar and serve.
