Chargrilled Tenderstem, romesco & grains

2 x 200g packs Waitrose Tenderstem Broccoli, trimmed
85g Cooks’ Ingredients Chargrilled Peppers In Olive Oil,
drained, plus 1 tbsp oil
25g blanched almonds
1 clove garlic, crushed
2 tbsp tomato purée
Juice of 1 lemon
250g pack Waitrose Love Life Spelt, Quinoa, Red Rice & Wild Rice
1. Preheat the grill to high with the top rack just under the grill. Toss the broccoli in the reserved oil from the peppers, season and set aside on
a baking sheet.
2. Blend the chargrilled peppers, blanched almonds, garlic, tomato purée and lemon juice in a food processor until thick and relatively smooth. Transfer to a small saucepan and place over a low heat for 5 minutes, until warmed through.
3. Meanwhile, grill the broccoli for 5 minutes, turning occasionally, until just tender. Cook the grains according to pack instructions then divide between 2 plates. Top with the sauce then the broccoli to serve.
Cook’s tip Try serving this with spoonfuls of fat free fromage frais or quark on top.
