Serves: 2
200g Waitrose Duchy Organic Tenderstem Broccoli
1 tsp olive oil
4 slices Waitrose Duchy Organic Wholemeal Seeded Bloomer
50g Waitrose Duchy Organic Soft Cheese
40g Waitrose Duchy Organic Sun Drenched Tomatoes, roughly chopped
40g Waitrose Duchy Organic Kalamata Olives, pitted and roughly torn
1. Bring a large pan of salted water to the boil. Blanch the broccoli for 3 minutes. Drain well, dry thoroughly and sprinkle with sea salt flakes.
2. Heat the olive oil in a frying pan over a high heat and fry the broccoli for a couple of minutes to char.
3. Meanwhile, toast the bread and spread with the soft cheese. Cut the broccoli into bitesized pieces and lay them on top of the cheese with the tomatoes and olives. Season with black pepper, then serve immediately.
Cook’s tip Try using other in-season veg in place of the broccoli, or even some leftovers if they need using up.
