Cheese toasties

Serves: 2
1 tbsp soft butter or mayonnaise
4 slices No.1 Sourdough Bread of your choice
75g No.1 Highmoor Cheese (or any washed, rind-soft cheese such as Taleggio or reblochon)
75g mature Cheddar
Your favourite chutney, to serve
1. Spread a thin layer of butter or mayo onto both sides of each slice of bread, then cut the soft cheese into slices and coarsely grate the Cheddar.
2. Warm a large, nonstick frying pan over a medium heat. Meanwhile, cover 2 slices of bread with grated cheese, placing the sliced soft cheese near the centre. Top each slice with a second piece of bread.
3. If your pan is large enough, nestle both sandwiches in the pan and cook for 3-4 minutes on each side, or until golden and crisp on both sides and the cheese is piping hot and fully melted. If you’ve got a small pan, cook the sandwiches in batches.
4. Remove the sandwiches from the pan and allow to sit on a board for 1 minute to settle, then slice and enjoy immediately, with your favourite chutney to dip.
Martha’s tip Soft butter is ideal for coating the bread for that golden-brown crunch, but if you’ve only got cold butter, mayonnaise works well as it’s easy to spread.
