    Cheshire cheese, thyme & apple soda bread

    Ingredients

    325g plain flour, plus extra for dusting
    1 tbsp finely chopped lemon thyme
    1½ tsp bicarbonate of soda
    1 tsp salt
    25g firm, slightly salted butter, cut into small pieces
    125g Cheshire cheese, crumbled
    2 x Waitrose 1 Best Of British Apples, cored and finely diced
    284ml carton buttermilk

    Method

    1. Preheat the oven to 220°C, gas mark 7. Line a baking sheet with baking parchment. Mix the flour, thyme, bicarbonate of soda and salt in a bowl. Add the butter and rub in with your fingertips.

    2. Add the cheese, apples and buttermilk and mix with a round bladed knife until it forms a soft, sticky dough. Tip out onto a floured surface and pat into a neat round ball. Transfer to the baking sheet and flatten until about 16cm in diameter. Flour the blade of a large knife and make a deep score through the centre of the dough, then across in the opposite direction.

    3. Bake for about 40 minutes until risen, pale golden and firm to the touch. The bread should sound hollow when tapped on the base. Serve warm or cold.
