Coconut & mango panna cotta

Serves: 4
400g can coconut milk
425g can mango slices with juice
3 tbsp Clearspring Agar Flakes (5g sachet Cooks' Ingredients Agar Agar)
300g Alpro Plain Unsweetened
Zest of 2 limes
1. Place the coconut milk and the juice from the mangos in a medium saucepan and sprinkle over the agar flakes. Bring to the boil without stirring. Simmer for 8-10 minutes, stirring occasionally until the flakes have dissolved.
2. Meanwhile, place the mango slices in a food processor and blend until puréed. Add the Alpro and mix until smooth. Stir in the zest of 1 lime. Add in the coconut mixture and pulse to combine.
3. Divide between 4 x 250ml dishes or glasses and chill for 1-2 hours or until set. Serve garnished with the remaining lime zest.
