    Courgette & onion raita

    • Preparation time: 10 minutes
    • Cooking time: 6 minutes to 8 minutes
    • Total time: 16 minutes to 18 minutes 20 minutes

    Serves: 6


    2 tbsp rapeseed oil
    1 tsp cumin seeds
    1 courgette, trimmed and thinly sliced
    1 red onion, thinly sliced
    300g natural yogurt
    ¼ tsp salt
    ¼ tsp chilli powder
    ¼ tsp ground cumin
    ½ tsp caster sugar


    1. Heat the oil in a large frying pan and add the cumin seeds.

    2. When they start to sizzle add the courgette and onion and cook for 6-8 minutes, until golden and slightly charred.

    3. Mix the yogurt with the salt, chilli, cumin and sugar in a bowl. Spread out onto a serving plate or in a shallow bowl, then spoon the courgette and onion mix on top to serve.
