Crab & avocado rolls

Makes: 4 rolls
200g white crab meat
2 tbsp mayonnaise
1 unwaxed lime, zest and juice
1 large salad onion, finely sliced
¼ tsp wasabi paste (optional)
4 rich & buttery hot dog rolls
1 avocado, sliced
½ pot salad cress, tips snipped
1. Combine the crab meat, mayonnaise, lime zest and juice, salad onion and wasabi paste (if using) in a bowl and season.
2. Use a serrated knife to split the rolls down the centre, taking care not to cut all the way through.
3. Divide the crab mixture and sliced avocado between the rolls and finish with a sprinkle of salad cress.
Cook’s tip The wasabi adds a lovely hot kick to the crab mixture, but you can leave it out if you prefer – or swap it for English mustard.
