    Dairy-free smoothie

    • Preparation time: 10 minutes, plus overnight soaking

    Serves: 2


    40g cashew nuts
    45g LOVE Life Mixed Seeds, plus extra to serve 
    2 tsp goji berries, plus extra to serve
    1 banana
    100g raspberries, plus extra to serve 
    75g strawberries 
    Juice ½ lemon
    Ice, to blitz and/or serve (optional)


    1 The night before, place the cashews intoa small bowl and pour over 100ml cold water. Cover and leave to soak overnight.

    2 The following morning, place the mixed seeds and goji berries into a mini processor or pestle and mortar. Crush to a fine powder.

    3 Place the soaked cashews with their soaking water into a liquidiser. Add the crushed seeds and goji berries, followed by the fruits, lemon juice and 100ml water.If your liquidiser is suitable for crushing
    ice, add a few cubes. Blitz together until smooth. Pour into large glasses, over ice if you wish, and decorate with extra seeds and berries. Drink immediately.
