Easy lamb meatball rogan josh

Serves: 4
1 tbsp sunflower oil
300g pack The Spice Tailor Rustic Rogan Josh
610g pack essential Waitrose British Lamb 24 Meatballs
400g can essential Waitrose Cannellini Beans, drained
1 (from a pack of 2) The Spice Tailor Garlic & Coriander Naans
½ x 28g pack fresh coriander, roughly chopped
1. Preheat the oven to 200ºC, gas mark 6. Heat the oil in a large, ovenproof frying pan or flameproof roasting tin. Add the spice mix and cook for 1 minute then add the meatballs and cook for 3-4 minutes turning regularly until browned all over. Add the base sauce from the pack and toss well with the meatballs and cook for 2 minutes.
2. Stir in the sauce from the pack along with the drained cannellini beans and 100ml of water and bring to a gentle simmer.
3. Place the naan in a food processor and pulse until you have coarse breadcrumbs. Sprinkle the breadcrumbs all over the meatballs and place in the oven for 20 minutes, until the topping is golden and crusty and the meatballs are cooked through. Sprinkle with coriander and serve with stir-fried greens or wilted spinach.
Cook’s tip
For a coarser topping that will give extra bite, tear the naan into small pieces rather than whizzing into crumbs.
