Easy prawn pie with cannellini mash

Serves: 4
400g potatoes, cut into small chunks
200g broccoli, cut into small florets
2 tsp butter
1 onion, finely chopped
235g pack frozen essential Waitrose Raw King Prawns
350g tub essential Waitrose Cheese Sauce
½ x 25g pack flat leaf parsley, chopped
400g can cannellini beans
50g mature Cheddar, grated
1. Boil the potatoes in a pan for 10 minutes or until tender. In a separate pan of boiling water cook the broccoli for 4-5 minutes until tender. Drain both. Tip the broccoli into a shallow pie dish.
2. Return the pan to the heat and melt the butter add the onion and fry until softened. Add the prawns and all but 2 tbsp of the cheese sauce. Cook, stirring frequently, for 5 minutes until the prawns are pink. Stir in the parsley and seasoning, then spoon onto the broccoli.
3. Preheat the grill to high. Return the potatoes to their saucepan, add the cannellini beans with 4 tbsp of their liquid and the reserved cheese sauce. Mash together until well crushed. Spoon over the filling and sprinkle with the cheese. Grill for 6-8 minutes until the cheese is melted and bubbling.
Cook’s tip For something different, you could use Waitrose Frozen Fish Pie Mix instead of, or to replace, some of the prawns.
