    Floating berry jellies

    • Preparation time: 20 minutes + chilling
    • Cooking time: 2 minutes
    • Total time: 25 minutes + chilling

    Makes: 1L or 6 x 175ml

    Ingredients

    750ml bottle Coldpress Pink Lady Apple Juice
    9g Dr Oetker Vege-Gel
    50g caster sugar
    190g pack Mixed Berries
     

    Method

    1. Add the apple juice to a small saucepan with the vege-gel and stir until dissolved, then add the caster sugar. Bring the liquid to the boil, stirring regularly to dissolve the sugar.

    2. Meanwhile, divide most of the berries between a 1L jelly mould or 6 x 175ml heatproof glasses or moulds.

    3. When the liquid is almost at boiling point, remove from the heat and divide the liquid between the mould/s or glasses. Leave to cool for
    15-20 minutes, then top with the remaining berries.

    4. Return to the fridge for 1-2 hours or until fully set before serving directly from the glasses. Alternatively, invert and turn out, then serve immediately.
