Green bean & cashew stir fry

Serves: 4
2 tbsp groundnut oil
4 cloves garlic, finely chopped
20 cashew nuts, roughly chopped
300g fine green beans
1 red pepper, thinly sliced
½ tsp salt
3 tsp Cooks’ Ingredients Sambal Oelek Paste
½ tsp clear honey
1. In a large pan, heat the oil over a medium heat, then add the garlic. Cook for a few seconds, then add the cashews and cook for a few seconds more. Add the beans and 2 tbsp water. Cover and cook for 4-6 minutes, until the beans are cooked but still have a little bite.
2. Add the pepper and cook for 1 minute, then add the salt, sambal oelek paste and honey. Turn up the heat to high and cook for 1 minute. Serve with rice or on its own as a light lunch.
Waste not: cashew nuts toss in a roasting tin with melted butter, sea salt flakes, ground black pepper and a drizzle of honey. Roast for 15 minutes at 180ºC, gas mark 4, until golden. serve as a snack with drinks.
