Herby pork, root & apple stovie

Serves: 4
1 tbsp essential Waitrose Olive Oil
420g pack essential Waitrose British Pork 12 Meatballs
2 essential Waitrose Onions, roughly chopped
500g essential Waitrose Swede, peeled and cut into chunks
6 sprigs fresh thyme, plus extra to serve
2 eating apples, peeled, cored and cut into wedges
1 tbsp essential Waitrose Cider Vinegar
100ml low salt chicken stock
essential Waitrose Wholegrain Mustard, to serve
1 Heat 1 tsp oil in a large frying pan over a high heat, then add the meatballs and fry for 5 minutes, until golden on the outside. Remove from the pan and set aside.
2 Add the rest of the oil, the vegetables and most of the thyme. Season, turn everything over in the pan a few times. Nestle the meatballs, apples and remaining thyme among the veg, add the vinegar and stock, then cover with a lid.
3 Simmer for 20-25 minutes until the swede is tender and golden
and sticky beneath. Scatter with more thyme leaves then serve with the mustard.
Cook’s tip
Try adding other root vegetables too, such as carrots, turnips, leeks and potatoes for an added burst of colour and flavour.
