Honey & bay roasted plums with almond butter

Serves: 4
4 large ripe plums, halved and stones removed
2-3 tbsp clear honey
2 bay leaves, scrunched a little
1 stick cinnamon or ¼ tsp ground cinnamon
50g almond butter
150g Greek yogurt
4 tbsp toasted flaked almonds
1. Preheat the oven to 200ºC, gas mark 6. In a medium baking dish, combine the plums, honey, bay leaves and cinnamon. Add 3 tbsp water, mixing well to coat, then arrange in an even layer, cut-side up, snugly in the baking dish.
2. Cover with foil (or a lid) and bake for 15-20 minutes to soften. Uncover and continue baking until the plums are completely tender and the edges are just beginning to caramelise (15-20 minutes). Serve warm with the almond butter, yogurt and almonds.
