@lottiemurphy's Raw peanut pad thai

Serves: 3
2 courgettes
1 carrot
1 yellow pepper cut into thin strips
1 red pepper cut into thin strips
2 spring onions
bunch of coriander finely chopped
1 red chilli deseeded and finely chopped
100ml coconut milk
2 tbsp peanut butter
juice of 2 limes
pinch of salt
1 tbsp tamari
1 tbsp sesame oil
3 tbsp sesame seeds
1. Spiralize the courgette and carrot and the “noodles” in a large bowl. Add the strips of pepper, spring onion, coriander and chilli.
2. Put the coconut milk, peanut butter, tamari, salt and sesame oil in a jar and shake it then pour the dressing over the vegetables.
3. Stir the salad then sprinkle the sesame seeds on top.
