Mackerel, tomato and cannellini bean salad

Serves: 4
½ x loaf plain ciabatta, torn into chunks
2 tbsp Waitrose Extra
Virgin Olive Oil
2 x 125g cans essential Waitrose Mackerel in Spicy Tomato Sauce
400g can essential Waitrose Cannellini Beans, drained and rinsed
200g pack essential Waitrose Crunchy Salad
½ x 500g pack essential Waitrose Cherry Tomatoes, halved
1. Preheat the oven to 200ºC, gas mark 6. Place the torn ciabatta on a baking tray and toss in the oil. Bake for 8–10 minutes or until golden.
2. Meanwhile, in a small pan, heat the mackerel with the sauce and the beans for 1–2 minutes, breaking up the fish into large chunks.
3. In a serving bowl, toss together the salad with the tomatoes, croutons and mackerel mixture.
