Mango and Passion Fruit Porridge (with Rose Petals)

Serves: 2
For the porridge
80g of jumbo porridge oats
300ml of boiling water
300ml of oat or almond milk
For the toppings
1 mango
150ml of oat or almond milk
1 passion fruit
rose petals for decoration
1. Place the oats in a small saucepan and cover with the boiling water. Leave to soak for about 5-10 minutes. This gives your porridge a really great creamy consistency but if you are short for time, just skip this step and go straight to cooking them with the oat or almond milk.
2. Remove the flesh from the mango and put it in a blender with 150ml of oat or almond milk. Blend until smooth.
3. After about 5 minutes, the oats will have absorbed the water and become soft. Add 300ml of your choice of milk and heat gently, stirring to stop it from sticking. Once you get a fluffy, creamy consistency, remove the pan from the hob and divide the porridge into two bowls.
4.Pour over the mango and scoop half of the passion fruit on top of each portion. Decorate with rose petals before serving - they don’t just look pretty, they actually taste great too.
5. If you love this recipe, you can pre-make a bigger batch of the topping and keep it in the fridge for a few days to save time in the mornings.
