Maple-grilled blueberries & peanut butter on toast

Serves: 2
80g blueberries
1 tbsp maple syrup
4 slices spelt sourdough
6 tbsp peanut butter
1. Preheat the grill to its highest setting. Line a small baking tray with foil and scatter the blueberries on top. Drizzle over the maple syrup and toss to coat. Put the tray on the top shelf and grill for 3 minutes, until the blueberries are soft and about to burst.
2. Remove from the grill and lightly mash to pop most of the blueberries, then grill again for a final 2 minutes.
3. Meanwhile, toast the bread, then spread generously with the peanut butter.
4. Spoon the juicy, grilled blueberries over the peanut butter. Sprinkle each with a pinch of sea salt flakes and serve immediately.
