½ x 250g pack halloumi
24 pitted prunes
12 x slices pancetta, halved
1. Slice the halloumi into 24 cubes around 2cm in size and stuff inside each prune where the pit would have been.
2. Wrap each stuffed prune in a half slice of pancetta and arrange on a parchment-lined baking tray. You can refrigerate the prunes at this stage to bake when needed – they will keep, covered, like this for 24 hours.
3. Preheat the oven to 200°C, gas mark 6. Bake for 12-15 minutes, or until the pancetta is crispy and the halloumi is blistering. Skewer onto 24 cocktail sticks and serve hot.
