Maunika Gowardhan's Strawberry Falooda

These delicious ice cream floats are sold by street vendors everywhere in India.
Serves: 6
135g pack strawberry jelly
30g chia seeds
100g fine vermicelli rice noodles
220ml berry coulis
500ml tub vanilla ice cream
about 100-150ml whole milk
handful crushed pistachios
200g strawberries, roughly chopped
1. Make the jelly according to pack instructions, then chill and allow to set completely in a bowl.
2. Before you want to make the falooda, chill 6 tall glasses in the fridge. Soak the chia seeds in cold water for 20 minutes; drain and set aside. Soak the rice noodles in 1 litre of boiling water for 8-10 minutes; drain, cut in half widthways and set aside.
3. Put 4 tbsp coulis into each glass, then a heaped spoonful of chia seeds and 3 tbsp jelly. Top with a handful of rice noodles, a scoop of ice cream and a splash of milk; scatter with the pistachios and strawberries.
