Mediterranean vegetable & sausage sizzle

667g pack Waitrose & Partners 10 British
1 tbsp olive oil
2 x 200g packs Waitrose Baby Potatoes, halved
2 x 400g packs Waitrose & Partners Mediterranean Roasting Vegetables
100ml vegetable stock
25g blanched almonds
1 clove garlic
25g fresh basil
25g Parmigiano Reggiano, finely grated
½ lemon, juice
1. Preheat the oven to 180ºC, gas mark 4. Put the sausages in a large roasting tin with the olive oil and toss together. Roast for 10 minutes, then add the potatoes and roast for a further 10 minutes.
2. Add the Mediterranean roasting vegetables and stock, toss everything together well and roast for 25 minutes, stirring halfway through, until the vegetables are tender and the sausages are browned and cooked through, the juices run clear and no pink meat remains.
3. Meanwhile, put the almonds in a food processor with the garlic and blitz to make fine crumbs. Add the basil and blitz again until you have a paste. Transfer to a bowl and stir in the cheese, lemon juice and a pinch of sea salt to make a pesto.
4. Stir the pesto through the sausages and vegetables until evenly coated. Return to the oven for a couple of minutes, to warm through. Serve with a green salad on the side.
