    Melon salsa

    Melon salsa

    • Preparation time: 10 minutes
    • Total time: 10 minutes 10 minutes

    Serves: 4-6 as a side

    Ingredients

    • 1⁄2 Cantaloupe melon, seeds removed
    • 3 salad onions, finely chopped
    • 200g tomatoes, finely chopped
    • 1 red chilli, finely chopped
    • 1⁄3 x 25g pack coriander, leaves only, finely chopped

    For the dressing
    • 2 tbsp extra virgin olive oil • 2 tbsp lemon juice

    Method

    1. Slice the melon into wedges, then cut away the skin and finely chop the flesh. Tip into a bowl with the chopped salad onions, tomatoes, chilli and coriander. In a small bowl, combine the dressing ingredients and whisk together; season, then add to the melon and stir well. This is lovely served alongside grilled chicken or fish.
