    150g unsalted butter, plus extra for greasing
    204g pack Doughlicious Salted Caramel & Dark Chocolate Gourmet Cookie Dough
    150g light brown soft sugar
    397g can condensed milk
    180g white chocolate
    20g pistachios, roughly chopped



    1 Preheat the oven to 170oC, gas mark 3. Grease and line a 20cm x 20cm brownie tin. Cut each cookie dough ball in half and flatten to make 2 discs. Put these in the base of the brownie tin so that it is evenly covered. Bake for 14 minutes until golden, using a metal spatula to flatten the dough halfway through. Set aside to cool for 10 minutes.

    2 Put the butter, sugar and condensed milk in a medium saucepan over a low heat and cook until the butter has melted and the sugar has dissolved. Increase the heat and boil, stirring, for 3-4 minutes until thickened and caramel-coloured, then pour over the cookie base. Set aside to cool for 1 hour.

    3 Melt the chocolate in a heatproof bowl set over a pan of simmering water, then spread over the caramel and scatter the pistachios on top. Cover and chill for 1 hour, then slice into squares (following a 7 x 7 grid).
