Mixed crushed potatoes

Serves: 4 - 6
1.4kg potatoes, such as Maris Piper
800g sweet potatoes
100g butter
½ x 25g pack fresh chives, chopped
25g pack fresh flat leaf parsley, chopped
6 tbsp semi-skimmed milk
1. Peel all the potatoes and cut them into small chunks. Place in a saucepan, cover with water, bring to the boil and cook for about 20 minutes until tender.
2. Meanwhile, in a small saucepan, melt the butter and stir in the herbs. Season.
3. Drain the potatoes thoroughly and return to the pan. Add the milk. Using a potato masher, crush the potatoes until broken into smaller pieces but not completely mashed.
4. Stir in the herb butter and spoon onto a warm serving plate.
