300g mushrooms, very finely chopped
2 salad onions, chopped
½ tsp cayenne pepper
Squeeze of lemon juice
2 tbsp soured cream
1/2 tbsp chopped dill leaves
1 batch blinis recipe (see below), about 6, to serve
1. Heat the butter in a frying pan and, once foaming, add the mushrooms. Sauté briskly so that the mushrooms get some colour.
2. Add the salad onions, cayenne and some seasoning. Cook until the mushrooms have exuded their liquid and this has evaporated. Add
a good squeeze of lemon juice and the soured cream. Stir in the dill and check the seasoning before serving with the blinis.
Serve with blinis
