Nasi goreng with crispy fried egg

Serves: 4
2 x 250g packs Waitrose microwave basmati rice
2 tbsp vegetable oil
2 garlic cloves, thinly sliced
15g fresh root ginger, thinly sliced
1 red Thai chilli, finely sliced
1 tbsp tamarind paste
100g sliced fine green beans
28g pack coriander, stalks finely chopped, leaves roughly chopped
2 tbsp kicap manis
4 large eggs

lime wedges, to serve
1. Heat the rice according to pack instructions. Heat 1 tbsp oil in a wok; fry the garlic, ginger, chilli and tamarind paste for 2 minutes. Add the beans and coriander stalks, fry for 1 minute; toss in the rice and kicap manis. Season and take off the heat.
2. Put 1 tbsp oil in a large frying pan over a high heat until very hot. Fry the eggs for 1 minute. Divide the rice between 4 bowls. Top each with a fried egg, coriander leaves, a little sliced chilli, and a few crispy fried onions. Serve with the lime wedges.
