Nectarine, feta & lentil salad

4 tsp Waitrose Duchy Organic Wholegrain Mustard With Honey
Finely grated zest and juice of 1 lemon
1 tbsp extra virgin olive oil
2 x 300g pouches Waitrose Wheatberries, Lentils & Green Vegetables
185g pack Waitrose Courgette Spaghetti
2 ripe nectarines, stoned and sliced
½ x 200g pack Greek light salad cheese, thinly sliced
1. In a large bowl, whisk together the mustard, lemon zest, juice and oil, then season.
2. Cook the wheatberry pouches according to pack instructions. Toss well with the dressing and raw courgette. Set aside for 5 minutes. Fold the nectarine and cheese through the salad then serve.
