Oatcakes topped with skyr and smoked salmon

120g Arla Skyr Simply Natural
½ tsp lemon juice, plus a squeeze to serve
85g smoked salmon, 50g finely chopped
1 heaped tsp Cooks’ Ingredients Garden Chives, chopped, plus extra to garnish
6 rough oatcakes
1. Beat the skyr and lemon juice together in a bowl, add the chopped smoked salmon, chives and some black pepper and mix together. Spread over the oatcakes, then divide the remaining salmon over the top. Add a little more black pepper and a squeeze of lemon and sprinkle with more chives.
