Orange and Ginger Wine Spritzer

Ingredients

200g granulated sugar

750ml bottle dry white wine

200ml brandy

5cm root ginger, peeled and sliced

Zest of 3 oranges, removed in slivers with a potato peeler

Soda water, to top up
Method

Put the sugar and 100ml water in a pan. Bring to a simmer. Cook for 2-3 minutes or until the sugar dissolves. Cool. Add the wine, brandy, ginger and orange zest. Chill for 24 hours so the flavours blend. Strain into a jug. Half-fill Champagne flutes with the mix, top with soda and serve.
