Peach, nectarine and lime spritzer

Serves: 8-10
150g caster sugar
6 ripe peaches/nectarines
3 limes, zest of 1, juice of 2, 1 sliced
sparkling water and ice, to serve
1. Put 600ml water in a saucepan with the sugar. Bring to the boil, stirring to dissolve, then reduce the temperature and simmer for 3 minutes, stirring now and then. Meanwhile, use a sharp vegetable peeler to peel the peaches and/or nectarines. Halve and take out the stones, then cut the fruit into small pieces. Add to the simmering syrup and cook for 3 minutes until tender.
2. Remove from the heat and leave to cool completely, then whizz in a blender with the lime zest and juice until completely smooth. Cover and chill until cold (about 1 hour). To serve, divide the peach and lime purée between 8-10 glasses and top up with sparkling water, ice and lime slices. Serve immediately.
