    Pesto chicken quinoa salad

    2 essential Waitrose British Chicken Breaded Steaks
    150g essential Waitrose Spinach
    250g pack Waitrose LOVE Life Puy Lentils & Quinoa
    125g essential Waitrosw Cherry Tomatoes, halved
    ½ bunch essential Waitrose Salad Onions, sliced
    2 tbsp pesto


    1. Preheat the oven to 200°C, gas mark 6. Place the chicken on a baking tray and bake for 18-20 minutes.

    2. Meanwhile, microwave the spinach in a bowl covered with clingfilm for 2-3 minutes until just wilted, drain and squeeze out excess juice.

    3. Stir the lentil mix with the tomatoes, salad onions, spinach and pesto, season. Check the chicken is cooked thoroughly (with no pink meat) then slice and serve with the salad.
