Pork, apple & sage burgers

Serves: 4
500g pack essential Waitrose British Pork Mince
1 dessert apple, peeled and coarsely grated
8 sage leaves, finely chopped
2 tbsp gherkins, chopped
1 tbsp olive oil
4 essential Waitrose White Sesame Seed Burger Buns, halved
¼ x 300g tub essential Waitrose Coleslaw
Iceberg lettuce leaves, essential,Waitrose Tomato Ketchup and mustard to serve
1. Preheat the oven to 200°C, gas mark 6. Mix the pork mince with the apple, sage and gherkins in a bowl. Season well and use your hands to make sure it is all well incorporated. Shape into 4 burgers.
2. Heat the oil in an ovenproof frying pan and fry the burgers for a couple of minutes each side until browned, then pop the pan in the oven for 5 minutes until the burgers are cooked through and there is no pink meat. Remove the pan from the oven and lift the burgers onto a plate to rest.
3. Return the pan to a medium heat. Place the halved buns, cut side down, into the pan (you may need to do this in batches) and fry for a minute until lightly golden.
4. Dollop a spoonful of coleslaw on to one half of each burger bun, top with the burger and a lettuce leaf. Spread the other half of the bun with mustard and ketchup, and place on top of your burger.
