    Pork fillet with braised lettuce & peas

    Serves: 4

    Ingredients

    1 tbsp olive oil
    450g pork fillet
    ½ x 750g pack baby new potatoes
    6 salad onions, trimmed and sliced
    100ml Cooks’ Ingredients Fresh Chicken or Vegetable Stock
    300g frozen petits pois
    2 little gem lettuce, trimmed and shredded
    ¼ x 25g pack mint leaves, shredded  

    Method

    1. Preheat the oven to 180ºC, gas mark 4. Heat the oil in a large frying pan over a high heat. Season the pork and fry for a minute on each side until browned all over. Wrap in a sheet of foil, then place on a baking sheet in the oven for 35-40 minutes or until the pork is cooked throughout, the juices run clear and there is no pink meat. Don’t clean the frying pan. Meanwhile, place the potatoes in a large saucepan, cover with cold water, then bring to the boil and simmer for 15 minutes. Drain.

    2. Ten minutes before the pork is ready, return the frying pan with the leftover oil and cooking juices to a medium heat. Fry the salad onions for a minute, then add the stock and petits pois and simmer for 3 minutes. Finally, stir in the lettuce and cook for a further 1-2 minutes until wilted.

    3. Remove the pork from the foil and add any cooking juices to the lettuce and peas. Slice the pork and serve with the potatoes and braised vegetables, scattering with the mint leaves to serve.
