Quinoa, pear & blueberry porridge

Serves: 2
75g quinoa
500ml apple juice
1 small cinnamon stick
25g porridge oats
1 Waitrose 1 Perfectly Ripe Conference Pear, peeled, cored and diced
50g Waitrose 1 Perfectly Soft Dried Pear, diced
1-2 tsp clear honey, plus extra to serve
50g blueberries
2 tbsp Waitrose 1 Fat Free Natural Strained Greek Yogurt
1 tbsp pistachio kernels, chopped
1. Rinse the quinoa under cold running water and drain well. Put in a small saucepan with the apple juice and cinnamon stick, then bring to the boil. Cover, reduce the heat to low and cook gently for 15-20 minutes until tender.
2. Remove from the heat and stir in the oats. Leave to cool for 5 minutes, then remove the cinnamon stick.
3. Mix in both types of pear, together with any juice and honey to taste. Halve about one third of the blueberries.
4. Spoon porridge into bowls and top with yogurt, blueberries and pistachios. Serve with extra honey drizzled over.
