Raspberry & lime gin cocktail

6 raspberries
25ml gin
1 tbsp lime juice
Sugar syrup
50g granulated sugar
1. To make the sugar syrup, heat 50ml water in a pan until it just starts to boil, then add the sugar and cook until the sugar has dissolved. Allow to cool completely, then store in a small bottle or jar in the fridge for up to 2 days.
2. Put the raspberries and 15ml sugar syrup in a cocktail shaker; crush with a fork. Add the gin, lime juice and a handful of ice cubes; shake well. Strain into an ice-filled glass to serve.
