Ruby orange & almond quinoa porridge

200ml Plenish Enriched Almond
½ tsp vanilla extract
1½ tsp maple syrup, plus extra to serve (optional)
1 ruby orange, peeled and pith removed, cut
1 tbsp toasted flaked almonds
1 Put the quinoa, 100ml almond drink, the vanilla extract and 100ml water in a small saucepan. Bring to the boil, then reduce to a simmer. Add the remaining almond drink and the maple syrup and stir, then simmer with the lid loosely on for about 15 minutes until the quinoa is tender.
2 Divide the porridge between 2 bowls and serve topped with slices of ruby orange, a scattering of toasted almond flakes and a drizzle of maple syrup if desired.
