    Spicy chickpeas & veg pulao

    Serves: 6

    Ingredients

    2 tbsp sunflower oil
    1 stick cinnamon
    1 bay leaf
    1 tsp cumin seeds
    2 onions, thinly sliced
    100g fine green beans, trimmed and cut into 4cm pieces
    100g cauliflower, cut into florets
    1 carrot, peeled and cut into 2.5cm pieces
    400g can chickpeas, drained and rinsed
    1 tsp salt
    1 tsp chilli powder
    1 tsp garam masala
    1 tsp ground turmeric
    400g basmati rice

    Method

    1. Heat the oil in a large saucepan. Add the cinnamon, bay leaf and cumin. When they start to sizzle, add the onion. Cook over a medium heat for 5 minutes, until soft and beginning to colour.

    2. Add the green beans, cauliflower, carrot and chickpeas, then stir fry for 2 minutes. Mix in the salt and spices, then add the rice after 1 minute. Mix well so that everything is combined.

    3. Add 1L boiling water. Stir, cover and cook for 15 minutes until the rice is cooked.

    4. Remove from the heat, but leave the pan covered for 10 minutes before serving.
