Spicy mackerel baked sweet potato

Serves: 1
1 sweet potato
115g bag baby spinach
125g can essential Waitrose Mackerel Fillets In Spicy Tomato Sauce
1 tbsp low fat natural yogurt
Olive oil, to serve
1. Preheat the oven to 200°C, gas mark 6.
2. Prick the skin of the sweet potato with a fork
and microwave on high for 4 minutes. Transfer to the oven and bake for 10 minutes or until tender. Place on a plate and split open.
3. Place the spinach in a bowl and microwave for 1-2 minutes until just wilted, squeeze out the excess liquid and place on top of the potato.
4. Warm the mackerel fillets and sauce in a small bowl in the microwave for 1 minute and spoon over the potato. Serve with a dollop of yogurt and a drizzle of olive oil.
