Sweet potato and salad onion mash

Serves: 6
1.25kg sweet potatoes
1 bunch salad onions
100ml milk
40g butter
Freshly ground black pepper
1. Peel the potatoes and cut into small chunks. Cover with cold water in a large an and bring to the boil. Reduce the heat to a gentle simmer and cook for 15 minutes or until the potatoes are very tender.
2. While cooking, finely chop the salad onions. Heat the milk in a small pan, add the onions and cook gently for 3 minutes.
3. Thoroughly drain the potatoes and return to the saucepan. Tip in the salad onions, milk and half the butter and mash until smooth. Season with plenty of pepper. Turn into a warmed serving dish and dot with the remaining butter.
